Barazek or Sesame Seed and Pistachio Cookies - Christmas Treats


It’s Christmas Eve, the cooking goddesses are preparing a perfect Christmas and here I am a wannabe goddess in my oversized pyjamas, drinking coffee, procrastinating and wondering how to feed a dozen and a half people tomorrow… My postman who always rings when we are in the midst of a cooking class is expecting a tin of treats. My kids who are no longer kids want to recreate days of Christmas past. I have not prepared much in advance and the elves are all busy with Santa!

Barazek

40 g light brown sugar
45 g icing sugar
150 g unsalted butter 
200 g 00 flour
2 teaspoons baking powder
1 egg
1 Orange blossom water
60 g pistachio nuts
70 g sesame seeds, lightly toasted

Makes about 20 biscuits
Preparation time:25 minutes
cooking time: 12 minutes
  1. Place sugar and butter in a food processor and blend them to a cream-like mixture. 
  2. Add the egg and vanilla extract. Finally 
  3. Add the flour and baking powder and pulse until combined.
  4. Take the dough out of the processor and place it in the freezer for 10 to 15 minutes or in the fridge for at least 30 minutes.
  5. Meanwhile, chop the pistachios to medium. And toast the sesame seeds by putting them in hot pan over medium heat for approximately minutes or until they begin to brown.( remember to keep stirring)
  6. Place the crushed pistachios in a large flat plate and the sesame seeds in another.
  7. Take little pieces of dough with your fingers and roll them between your hands to form marble-like balls. Flatten each ball, first in the pistachio plate then turn it over and press the other side into the sesame seeds.
  8. Place on a baking tray.
  9. Bake for 12 minutes in a 180°C oven.
  10. Transfer and leave to cool.
