A Little Pink Lemonade on a Hot Afternoon

The town of Batroun in Lebanon, is renowned for two things: its Phoenician sea wall and its lemonade or laymonada. The secret of their tasty drink is to squeeze and rub the whole lemon - skin, pulp and all- into the sugar until it is dissolved and then adding water and ice. The rind adds aroma and flavour.
Today I made lemonade using a blender and adding a couple of strawberries into the mix. Pretty .. and refreshing. Not quite Batroun, more like Acfold road...



1 organic lemon peeled, quartered, pips removed
1 piece (2 cm) of rind
2 strawberries
3 tablespoons of Agave nectar or 4 tablespoons caster sugar
10 ice cubes
50 ml water

Place all the ingredients except for water in a blender and process until smooth. When the mixture becomes compact- a sort of granita-  change the setting to 'smoothie' and add water.
process for a couple seconds.
Serve and drink!
